  • 2 pounds chicken breasts or thighs
  • 3 tablespoons olive oil
  • 1/4 cup coconut milk
  • 1/4 cup low sodium soy sauce
  • 1/4 cup packed brown sugar
  • 1 tablespoon chili paste (Sambal Oelek)
  • 1/2 cup smooth peanut butter
  • lime juice
  • fish sauce
  • dried basil
  • ground coriander

Instructions

  1. In a mixing bowl, whisk together the marinade ingredients and set aside 1/3 cup for the sauce. Combine remaining marinade with chicken in a sealed bag and marinate for at least 6 hours.
  2. Soak wooden skewers in water for 30 minutes to prevent burning. Thread marinated chicken onto skewers.
  3. Preheat oven to 350°F (or grill as preferred). Bake skewers on lined baking sheets for 15-20 minutes until cooked through.
  4. For the peanut sauce, heat reserved marinade in a saucepan, stir in coconut milk and peanut butter until combined.
  5. Serve warm with peanut sauce for dipping.
