  • 1 quart strawberry ice cream (softened)

  2. In a food processor, pulse cookies into fine crumbs. Add freeze-dried strawberries and pulse briefly before pouring in melted butter; pulse until moistened.
  3. Press half of the cookie mixture into the bottom of the lined pan.
  4. Spread softened strawberry ice cream evenly over the crust.
  5. Sprinkle the remaining cookie mixture on top of the ice cream layer.
  6. Cover and freeze for at least 2 hours or until solid.
  7. Once firm, slice into bars and serve chilled.
