  • 8 ounces cream cheese (softened)
  • ¼ cup unsalted butter (softened but still cool)
  • 1 teaspoon pure vanilla extract
  • 1 3/4 cups confectioners’ sugar (sifted)

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin pie spice; set aside.
  3. In a mixer, beat butter with granulated and brown sugars until light and fluffy. Add pumpkin puree, egg, and vanilla; mix until combined.
  4. Gradually add dry ingredients to wet mixture until just combined.
  5. Scoop tablespoon-sized dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 13 to 15 minutes until edges are set but centers remain soft; cool on wire racks.
  7. For frosting, beat cream cheese with butter until smooth; add vanilla and confectioners' sugar until combined.
  8. Frost cooled cookies generously and sprinkle with cinnamon if desired.
