  • 1 tablespoon pumpkin pie spice
  • 406468 grams all-purpose flour
  • 150 grams brown sugar
  • 1 1/2 teaspoon ground cinnamon
  • 3 oz butter (for both dough and frosting)
  • 4 oz cream cheese, softened to room temperature
  • 1 tablespoon pure vanilla extract
  • 2 tablespoons heavy cream
  • 180 grams confectioners' sugar

Instructions

  1. Activate the yeast by mixing it with warm water and sugar; let it sit until foamy.
  2. In a mixing bowl, combine browned butter, egg, dry milk powder, salt, pumpkin puree, and pumpkin pie spice.
  3. Gradually incorporate flour until fully mixed; knead until smooth.
  4. Allow dough to rise in a warm spot until doubled in size (1–2 hours).
  5. Prepare the filling by mixing brown sugar with cinnamon and pumpkin pie spice.
  6. Roll out the dough into a rectangle, spread with browned butter, sprinkle filling evenly, then roll tightly and slice into rolls.
  7. Arrange in a greased baking dish; let rise for another hour.
  8. Bake at 350°F for 25–27 minutes until golden brown.
