  • 1 dozen hard-boiled eggs
  • 4 ounces Mexican chorizo sausage
  • 1 tablespoon finely chopped cilantro (plus sprig for garnish)
  • 1/4 cup roasted red bell pepper (finely diced)
  • 1 tablespoon sherry vinegar
  • 3 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Hard boil the eggs: Place eggs in a saucepan covered with cold water. Bring to a simmer over low heat and cook for 15-18 minutes. Transfer to an ice bath until cooled.
  2. Prepare egg whites: Slice each egg lengthwise, remove yolks, and place them in a mixing bowl. Arrange egg white halves on a serving plate.
  3. Cook chorizo: In a skillet over medium heat, cook chorizo until crispy.
  4. Make filling: Combine yolks with cilantro, roasted red pepper, sherry vinegar, mayonnaise, mustard, salt, and pepper; mash until smooth.
  5. Fill egg whites: Spoon the mixture into each white half using a spoon.
  6. Garnish & serve: Top with crispy chorizo and cilantro sprig before serving.
