  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened to room temperature
  • 1 cup packed dark brown sugar
  • 1 large egg, at room temperature
  • 1/3 cup pure maple syrup
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon maple extract
  • 1 cup chopped pecans
  • 2 tablespoons unsalted butter
  • 1/3 cup pure maple syrup
  • 1 cup sifted confectioners’ sugar
  • pinch salt, to taste

Instructions

  1. Whisk together the flour, baking soda, and salt in a medium bowl until well combined. Set this mixture aside for later use.
  2. Using a stand mixer or hand mixer fitted with a paddle attachment, cream the unsalted butter and dark brown sugar on medium speed until smooth—this should take about 1-2 minutes.
  3. Add the egg and beat on high until fully combined (about 30 seconds). Scrape down the bowl as needed.
  4. Mix in the pure maple syrup, vanilla extract, and maple extract on high speed until combined.
  5. Pour the dry ingredient mixture into the wet ingredients. Mix on low speed until just combined. Gently fold in the chopped pecans until evenly distributed throughout the dough.
  6. Cover the dough tightly with plastic wrap and chill in the refrigerator for at least 2 hours (or up to 3 days). If chilling longer than a few hours, allow it to sit at room temperature for about 30 minutes before rolling.
  7. Preheat your oven to 350°F (177°C). Line two to three large baking sheets with parchment paper or silicone mats.
  8. Roll cookie dough into balls using about 1.5 tablespoons of dough per cookie and place them on prepared baking sheets with adequate spacing between each ball.
  9. Bake each batch for approximately 12-13 minutes until lightly browned on the sides but soft in the center.
  10. If cookies look puffy upon removing them from the oven, gently bang the pan on your countertop to slightly deflate them. Cool on baking sheets for about five minutes before transferring to a wire rack to cool completely.
  11. In a small saucepan over low heat, melt together the unsalted butter and pure maple syrup while whisking occasionally. Once melted, remove from heat and whisk in sifted confectioners' sugar. Taste and add a pinch of salt if desired. Drizzle icing over cooled cookies—allow it to set for about one hour.
