Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs with melted butter and press firmly into the bottom of a springform pan.
  2. In another bowl, beat cream cheese and sugar until smooth. Add sour cream, butterscotch sauce, and vanilla; mix until fully combined.
  3. Pour the filling over the crust in the springform pan. Bake for 40-45 minutes until edges are set but the center is slightly jiggly.
  4. Turn off the oven and leave the cheesecake to cool for one hour with the door ajar. Refrigerate for at least four hours or overnight before serving.
