2 pounds boneless, skinless chicken breasts (cut into bite-sized pieces)
1/2 cup soy sauce
1/4 cup water
2 tablespoons sweet rice apple vinegar
1/2 cup brown sugar
Pineapple chunks
Bell pepper and red onion (cut into chunks)
Cornstarch (for thickening the sauce)
Instructions
In a small saucepan over medium heat, combine soy sauce, water, rice apple vinegar, brown sugar, minced garlic, and ginger. Bring to a boil and simmer for 5 minutes.
Mix cornstarch with a tablespoon of water in a bowl. Slowly add to the sauce while stirring until thickened. Remove from heat.
Marinate chicken in half of the teriyaki sauce for at least 1 hour or overnight.
Preheat the grill to medium heat.
Assemble kabobs by alternating chicken pieces with pineapple and vegetables on soaked skewers.
Grill kabobs for about 3–4 minutes per side until chicken reaches an internal temperature of 170°F. Brush with remaining teriyaki sauce during grilling.
