  • 1 box instant lemon pudding mix (3.4 oz)
  • 3/4 cup water
  • 3/4 cup oil
  • 4 eggs
  • 2 cups powdered sugar (for syrup)
  • 1/3 cup lemon juice (for syrup)
  • 2 tbsp unsalted butter (melted for syrup)
  • 2 tbsp water (for syrup)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 baking pan.
  2. In a large bowl, beat the eggs until fluffy. Add the yellow cake mix, lemon pudding mix, water, and oil; mix until smooth.
  3. Pour the batter into the prepared pan and bake for 30-35 minutes or until a toothpick inserted comes out clean.
  4. While baking, combine melted butter, lemon juice, water, and powdered sugar in a bowl for the soaking syrup.
