  • 2 zucchini squash (thinly sliced)
  • 45 tomatoes (sliced)
  • 11/2 cups shredded mozzarella cheese
  • 1/2 cup shredded Parmesan cheese
  • 3/4 cup fine bread crumbs
  • 2 tablespoons butter (melted)
  • 2 teaspoons garlic powder
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×9 baking dish with nonstick spray.
  2. In a mixing bowl, combine the mozzarella, Parmesan, garlic powder, basil, oregano, salt, and pepper.
  3. Layer half of the sliced zucchini at the bottom of the dish, sprinkle with a quarter of the cheese mixture, then add a layer of sliced tomatoes and another quarter of cheese. Repeat this layering process until all ingredients are used.
  4. In a small bowl, mix melted butter with fine bread crumbs and sprinkle over the casserole.
  5. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 20 minutes until golden brown.
  6. Let stand for 5 minutes before slicing and serving warm.
