  • 12 cups grated zucchini
  • 2 cups diced onion
  • 12 cups fresh tomatoes (chopped)
  • 34 jalapeno peppers (diced)
  • 1 1/2 cups brown sugar
  • 2 cups white vinegar
  • 3 1/2 TBSP canning salt
  • 1 TSP turmeric
  • 1 TSP cumin
  • 1 TSP garlic powder
  • 1 TSP black pepper
  • 1 1/22 1/2 TBSP red chili peppers
  • 1 TBSP mustard seeds

Instructions

  1. Grate zucchini and refrigerate overnight with pickling salt to reduce moisture.
  2. Rinse the zucchini under cold water to remove excess salt.
  3. Chop all vegetables including onions, tomatoes, and peppers.
  4. In a large stock pot over medium-high heat, combine all ingredients and bring to a boil.
  5. Reduce heat and simmer for 45 minutes to an hour until thickened.
  6. Ladle hot salsa into sterilized jars, leaving 1/2 inch headspace.
  7. Process jars in a water bath canner for preservation.
