  • ½ teaspoon baking soda
  • 1 tablespoon cinnamon
  • 1 teaspoon salt
  • 2 cups grated zucchini (about 2 small)
  • ¾ cup vegetable oil
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1 ½ cups chopped walnuts (or pecans)

Instructions

  1. Preheat your oven to 350°F and grease two 8×4-inch loaf pans.
  2. In a medium bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In a large bowl, mix grated zucchini, vegetable oil, eggs, and vanilla until combined.
  4. Gently fold the dry ingredients into the wet mixture along with the walnuts until just combined.
  5. Divide the batter evenly between the prepared loaf pans and bake for 50–60 minutes or until a toothpick comes out clean.
  6. Allow to cool in the pans for about 15 minutes before transferring to a wire rack to cool completely.
