  • 1/2 pound ground chicken
  • 1 tablespoon unseasoned rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon garlic (grated)
  • 1 teaspoon fresh ginger (grated)
  • 1 teaspoon light brown sugar
  • 2 green onions (finely chopped)
  • 24 wonton wrappers (square-shaped and inches on each side)
  • 6 cups low-sodium chicken broth
  • 3 garlic cloves minced
  • 2 1/2 tablespoons dark soy sauce
  • 1 teaspoon sesame oil
  • 23 finely chopped green onions
  • 3 baby bok choy (cut lengthwise)

Instructions

  1. Prepare the filling by mixing ground chicken, rice vinegar, soy sauce, sesame oil, grated garlic and ginger, light brown sugar, and green onions in a bowl until well combined.
  2. Assemble the wontons by placing a teaspoon of filling in the center of each wrapper, moistening the edges with water, folding over to seal.
  3. In a large pot, heat broth over medium heat; add minced garlic and soy sauce. Bring to a simmer.
  4. Cook assembled wontons in the broth until they float (about 5 minutes). Add bok choy during the last minute of cooking.
