  • 2 large ripe peaches
  • 1 cup glutinous rice flour (or mochiko flour)
  • 1/4 cup sugar
  • 1 cup water
  • 1/2 cup cornstarch (for dusting)

Instructions

  1. Boil water in a medium pot. Score the bottom of each peach and boil for 1 minute. Transfer to cold water, peel, and halve.
  2. In a microwave-safe bowl, mix glutinous rice flour and sugar. Gradually add water until smooth. Cover with a wet paper towel and microwave for 3 intervals of 1 minute each, stirring in between until thickened. Cool slightly.
  3. Dust your work surface with cornstarch, then roll out mochi into circles about 1/6-inch thick.
  4. Enclose each peach half in mochi by pulling up the sides and sealing completely. Dust off excess cornstarch before placing seam-side down.
