  • 4 tablespoons plain Greek yogurt
  • Zest of 1 lemon
  • 1 clove garlic
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 container grape tomatoes
  • 2 tablespoons olive oil
  • 2 cloves garlic, rough chop
  • Pinch of salt and pepper
  • 1 baguette, sliced (rubbed with olive oil and grilled if desired)
  • Chopped fresh basil and oregano for garnish (opt.)

Instructions

  1. Prepare the whipped feta by blending feta cheese, Greek yogurt, lemon zest, garlic, oregano, basil, parsley, salt, and pepper in a food processor until smooth.
  2. Preheat the oven to 400°F. In a baking dish, toss grape tomatoes with olive oil, garlic, salt, and pepper. Roast for 20-25 minutes until softened and bursting.
