  • 8 oz lo mein noodles
  • 8 oz mushrooms, quartered
  • 1 cup broccoli florets
  • 1 large carrot, cut into thin strands
  • ½ red pepper, sliced
  • 3 garlic cloves, minced
  • 1 Tbsp ginger, grated
  • 2 Tbsp green onion, chopped
  • 1 Tbsp oil for sautéing
  • 2 Tbsp unsalted butter for sautéing
  • 1 tsp sesame oil
  • 3 Tbsp honey
  • ½ tsp sriracha
  • ¼ cup low-sodium soy sauce
  • ⅓ cup vegetable or chicken broth
  • 1 tsp cornstarch

Instructions

  1. Cook the lo mein noodles according to package instructions. Drain and keep warm.
  2. Prepare vegetables: quarter the mushrooms, cut broccoli into florets, slice the carrot and red pepper.
  3. In a large skillet over medium-high heat, heat oil and butter. Sauté the vegetables until tender.
  4. In a mixing bowl, combine honey, sriracha, soy sauce, broth, and cornstarch to make the sauce.
  5. Add minced garlic and ginger to the skillet; cook until fragrant.
  6. Stir in the cooked noodles and pour in the sauce; mix well until heated through.
  7. Garnish with chopped green onions before serving.
