  • 2 tablespoons water
  • 1 1/2 cups shredded zucchini
  • 3/4 cup sugar (adjustable)
  • 1/3 cup neutral oil (or applesauce)
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups flour (all-purpose or gluten-free)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • Optional: 1/2 cup mini vegan chocolate chips

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix chickpea flour with water and let sit for about 10 minutes.
  3. Shred zucchini using a grater or food processor.
  4. In a bowl, combine wet ingredients: zucchini, sugar, oil, chickpea mixture, and vanilla.
  5. In another bowl, whisk dry ingredients: flour, baking soda, baking powder, salt, and cinnamon.
  6. Gradually add dry mixture to wet ingredients until just combined.
  7. Gently fold in chocolate chips if desired.
  8. Fill greased muffin tin three-quarters full and bake for 18-20 minutes.
