  • 1 block (14-16 oz) Extra-Firm Tofu
  • ½ cup Low-Sodium Soy Sauce (or Tamari)
  • ½ cup Water (or Vegetable Broth)
  • ¼ cup Maple Syrup (or Agave Nectar)
  • 1 large head Broccoli
  • 2 medium Carrots
  • 1 Red Bell Pepper
  • 8 oz Noodles (Udon, Soba, or Ramen)
  • Neutral Oil for cooking
  • Garlic and Fresh Ginger for flavor

Instructions

  1. Press the tofu to remove excess moisture and cut into cubes.
  2. Toss tofu cubes with soy sauce and cornstarch until coated.
  3. In a non-stick pan, heat oil over medium heat and cook tofu until golden brown; set aside.
  4. Combine soy sauce, water, maple syrup, rice vinegar, sesame oil, garlic, ginger, and cornstarch slurry in the same pan over medium heat; stir until thickened.
  5. Sauté broccoli, carrots, red bell pepper, and green onions until tender.
  6. Cook noodles as per package instructions; drain well.
  7. Add noodles to the sautéed vegetables along with tofu and teriyaki sauce; toss gently to combine.
