  • 1/2 cup + 2 tablespoons sugar
  • 1/4 cup brown sugar
  • 1 flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water)
  • 1 teaspoon vanilla bean paste
  • 1 1/2 cups + 3 tablespoons all-purpose flour
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2/3 cup pumpkin puree (NOT pumpkin pie filling)
  • 1/4 cup maple syrup
  • 2 tablespoons oat milk (or any plant-based milk)
  • 2 teaspoons cornstarch
  • 1 teaspoon vanilla bean paste
  • 1/2 teaspoon pumpkin pie spice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the flax egg by mixing ground flaxseed with water and letting it sit for about 5 minutes.
  3. In a mixing bowl, cream together vegan butter, sugars, flax egg, and vanilla until light and fluffy.
  4. In another bowl, whisk together flour, pumpkin pie spice, baking powder, and salt. Gradually combine dry ingredients with wet ingredients.
  5. Scoop tablespoon-sized portions of dough, roll into balls, and place on a lined baking sheet.
  6. In a separate bowl, mix pumpkin puree with maple syrup until smooth.
  7. Create an indentation in each cookie ball and fill with pumpkin mixture.
  8. Bake for approximately 15 minutes until edges are slightly golden.
