  • 3/4 cup (1 1/2 sticks) cold butter, cut into cubes
  • 1 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg, cold
  • 2 teaspoons pure vanilla extract
  • 4 ounces (1 bar) good quality semi sweet baking chocolate, chopped
  • 1 1/8 cups semi sweet chocolate chips, divided
  • 3/4 cup coarsely chopped walnuts
  • Sea salt, optional

Instructions

  1. Preheat your oven to 400°F (200°C) and line two cookie sheets with parchment paper.
  2. In a bowl, whisk together all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt.
  3. Cream cold butter with light brown sugar and granulated sugar until smooth. Mix in the egg and vanilla until combined.
  4. Gradually add the dry ingredients followed by chopped chocolate and walnuts; mix until just incorporated.
