  • 1.62.2kg / 3.2 – 4.4lb lamb shoulder, bone-in
  • 2 cups water
  • 1 brown onion, unpeeled and cut into wedges
  • 2 1/2 tsp fresh rosemary, chopped
  • 1 tbsp dried oregano
  • 2 large garlic cloves, finely chopped
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 cup extra virgin olive oil

Instructions

  1. Preheat oven to 230°C / 450°F.
  2. Mix marinade ingredients in a bowl and rub over the lamb shoulder.
  3. Marinate for at least 2 hours (up to 24 hours for deeper flavor).
  4. Place onion wedges in a roasting pan, add lamb on top, and pour in water.
  5. Roast uncovered for about 45 minutes.
  6. Lower oven temperature to 100°C / 210°F and cover tightly with baking paper and foil; roast for 12 hours.
  7. Check tenderness; if not easily shreddable, return to oven until done.
  8. Rest the lamb before serving to retain juices.
