  • 1/2 cup grated parmesan
  • 1 large egg plus 1 yolk
  • 1 1/2 pounds ground turkey
  • 1 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Olive oil or avocado oil for brushing and lightly frying
  • 2 tablespoons ghee or unsalted butter
  • 1 tablespoon olive oil
  • 1/2 cup finely minced onion
  • 6 cloves garlic, pressed
  • 2 teaspoons Italian seasoning
  • 1 (15 ounce) can plus 1 cup organic pumpkin puree
  • 1 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1 3/4 cups chicken stock
  • 1/2 cup grated parmesan cheese
  • 1/4 cup heavy cream
  • 2 tablespoons maple syrup
  • 1 tablespoon chopped fresh sage
  • Fried sage leaves (optional garnish)

Instructions

  1. Gather and prep all ingredients.
  2. In a large bowl, mix breadcrumbs with milk. Let soak for 2-3 minutes.
  3. Add onion, garlic, sage, parsley, Italian seasoning, parmesan cheese, egg, and yolk to the soaked breadcrumbs; combine well.
  4. Gently mix in ground turkey along with salt and pepper until just combined.
  5. Form mixture into meatballs (about two tablespoons each) and chill for 20-25 minutes.
  6. Sear meatballs in a skillet over medium-high heat until golden brown on all sides and cooked through (165°F internal temperature).
  7. Prepare the sauce by sautéing onion and garlic in ghee or butter; stir in pumpkin puree and chicken stock, simmering gently.
  8. Finish by whisking in cream, maple syrup, and parmesan before adding back the meatballs to warm through.
