  • kosher salt and freshly ground black pepper to taste
  • 10 ounces pasta (rigatoni, penne, or farfalle)
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced or grated
  • 1/41/2 teaspoon red pepper flakes
  • 1 lemon, juiced
  • 1/2 cup shredded parmesan cheese
  • 2 teaspoons fresh thyme leaves

Instructions

  1. Preheat your oven to 425°F.
  2. On a baking sheet, combine chopped turkey bacon, cubed butternut squash, halved Brussels sprouts, and diced shallots. Drizzle with olive oil and season generously with salt and pepper.
  3. Roast for 20–25 minutes until vegetables are tender and bacon is crispy.
  4. Cook pasta according to package instructions; reserve 1 cup of pasta water before draining.
  5. In a skillet over medium heat, sauté minced garlic and red pepper flakes in olive oil until fragrant.
  6. Add cooked pasta to the skillet along with roasted vegetables, turkey bacon, thyme leaves, parmesan cheese, and fresh lemon juice. Toss everything together.
  7. Stir in reserved pasta water until a creamy sauce forms; adjust as needed.
