  • 500 g lamb (shoulder or neck)
  • 2 brown onions
  • 3 medium carrots
  • 680 g floury potatoes (like Maris Pipers)
  • 480 ml hot chicken or vegetable stock
  • 1 heaped tbsp plain flour
  • Butter and oil for cooking
  • Bay leaves
  • Salt
  • Pepper
  • Worcestershire sauce
  • Dried thyme

Instructions

  1. Preheat the oven to 170C/325F (fan).
  2. Brown the lamb in butter and oil for 3–4 minutes; set aside.
  3. Sauté sliced onions until soft (about 3–4 minutes).
  4. Stir in flour then add stock, bay leaves, salt, pepper, and Worcestershire sauce; simmer for 30 minutes covered.
  5. Add chopped carrots and layer on sliced potatoes; brush with melted butter and sprinkle thyme.
  6. Cover and bake for an hour; remove cover and increase temperature to 200C/400F for an additional 30 minutes until potatoes are crispy.
  7. Let rest for five minutes before serving.
