  • 2 tbsp olive oil
  • 2 medium zucchinis, sliced
  • 1.5 cups cherry tomatoes, halved
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Optional: red pepper flakes and Italian seasoning
  • For serving: Parmesan cheese and fresh basil

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente; reserve ½ cup of pasta water before draining.
  2. In a skillet over medium heat, add olive oil. Sauté zucchini for 3-5 minutes until softened. Add cherry tomatoes and garlic; season with salt, pepper, red pepper flakes, and Italian seasoning. Cook until tomatoes are soft.
  3. Combine drained pasta with the sautéed vegetables in the skillet. Toss gently to combine, adding reserved pasta water as needed.
  4. Stir in Parmesan cheese and chopped basil before serving.
