  • 2 slices sourdough bread
  • 2 tablespoons mayonnaise
  • 2 tablespoons basil pesto
  • 1 sliced tomato (roma or heirloom)
  • 1 cup shredded aged cheddar cheese
  • 1/4 teaspoon ground black pepper

Instructions

  1. Spread half the mayonnaise on one slice of sourdough and place it mayonnaise-side down in a skillet.
  2. Smear the same slice with basil pesto.
  3. Layer half the cheddar cheese, followed by sliced tomatoes seasoned with black pepper.
  4. Top with remaining cheddar and place the second slice of bread on top.
  5. Spread remaining mayonnaise on the top slice of bread.
  6. Cook over medium heat for 3-4 minutes until golden brown, then flip and toast the other side for another 3-4 minutes.
  7. Remove from skillet, slice in half, and serve with kettle chips.
