  • 5 ounces butter (or non-dairy butter)
  • 2 tablespoons iced water
  • ½ teaspoon salt
  • 1 cup ricotta (or non-dairy ricotta)
  • ½ cup grated parmesan (or non-dairy cheese)
  • 15 leaves basil (+ more for garnish)
  • 1 lemon (the grated zest)
  • ½ teaspoon salt
  • 1 twist black pepper
  • 1 pound cherry tomatoes (halved)
  • 1 tablespoon extra virgin olive oil
  • ½ clove garlic (grated)
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Prepare the dough by combining flour and salt in a food processor. Add cold butter and pulse until crumbly. Gradually add iced water until the dough comes together. Form into a disk, wrap in plastic, and chill for 30 minutes.
  2. In a bowl, mix ricotta, grated parmesan, chopped basil, lemon zest, salt, and pepper until smooth.
  3. Preheat your oven to 400°F (200°C).
  4. Roll out chilled dough on parchment paper into a 12-inch circle. Spread the ricotta mixture in the center, leaving a 2-inch border. Top with halved cherry tomatoes.
  5. Fold the dough edges over the filling to create a border. Drizzle with olive oil and sprinkle with garlic, oregano, salt, and pepper.
  6. Bake for about 50 minutes until the crust is golden brown.
