  • 1/2 lb baby plum tomatoes (halved)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 small red onion (finely diced)
  • Fresh basil and parsley (finely diced)
  • 5 oz burrata cheese
  • Baguette slices for toasting

Instructions

  1. In a large shallow dish, whisk together olive oil, red wine vinegar, onion, basil, parsley, salt, and pepper. Add halved tomatoes and toss to coat. Cover and refrigerate for at least 30 minutes.
  2. Meanwhile, slice the baguette and brush both sides with olive oil. Toast under the grill until golden brown.
