  • 4 oz fresh mozzarella cheese (thinly sliced)
  • 8 oz baguette bread (cut into 1-inch slices)
  • 2 oz onions (chopped)
  • 4 tbsp extra virgin olive oil
  • 2 tbsp minced garlic
  • 4 tbsp balsamic vinegar
  • 2 tsp honey
  • 1/8 tsp salt
  • 0.5 oz fresh basil (chopped)

Instructions

  1. Preheat the oven to 350°F.
  2. In a mixing bowl, combine 2 tablespoons of olive oil and minced garlic; set aside.
  3. Brush each baguette slice with the garlic mixture and place on a baking sheet. Bake for about 10 minutes until lightly browned.
  4. For the balsamic glaze, simmer balsamic vinegar in a small saucepan over medium-low heat until reduced by half; stir in honey and cook until thickened.
  5. In another bowl, mix remaining olive oil with tomatoes, onions, salt, and basil until well combined.
  6. Assemble bruschetta by topping each toasted bread slice with mozzarella, followed by tomato mixture and a drizzle of balsamic glaze.
