  • 16 oz extra firm tofu
  • 5 oz baby spinach
  • 20 jumbo pasta shells
  • 25 oz marinara sauce
  • 1 tbsp nutritional yeast
  • ¼ cup grated Parmesan cheese (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Boil salted water in a large pot.
  2. Cook spinach for 30–60 seconds until wilted; drain.
  3. Cook jumbo shells according to package instructions; drain and drizzle with olive oil.
  4. In a food processor, blend crumbled tofu, lemon juice, zest, nutritional yeast, salt, sugar, and herbs until grainy.
  5. Mix drained spinach into the tofu ricotta.
  6. Spread marinara sauce in a baking dish. Stuff each shell with the ricotta mixture and place in the dish. Top with remaining sauce and sprinkle with Parmesan.
  7. Cover with foil and bake for 20 minutes until warmed through.
