  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter (softened)
  • 2 large eggs
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk (or buttermilk)
  • 1/4 cup cooled espresso
  • 8 oz mascarpone cheese (softened)
  • 1/2 cup heavy cream (cold)
  • Cocoa powder for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream softened butter and sugar until fluffy. Add eggs one at a time, mixing well.
  3. In another bowl, combine flour, baking powder, and salt. Alternate adding dry ingredients and milk with espresso to the butter mixture until just combined.
  4. Fill muffin tins with batter and bake for 15–20 minutes or until a toothpick comes out clean. Cool before soaking.
  5. Brush warm cupcakes with espresso syrup made from heating espresso and sugar until dissolved.
  6. Beat mascarpone cheese until smooth, then add heavy cream while whipping until soft peaks form. Dust frosted cupcakes with cocoa.
