Ingredients

Scale
  • 1 lb sirloin or ribeye steak (cut into bite-sized chunks)
  • 8 oz dried rotini pasta
  • 3 tbsp unsalted butter
  • 4 cloves fresh garlic (minced)
  • 0.75 cup heavy cream
  • 0.5 cup freshly grated parmesan cheese
  • Red chili flakes to taste
  • Fresh parsley for garnish

Instructions

  1. Gather all ingredients. Cut steak into bite-sized pieces and mince garlic.
  2. Boil salted water in a large pot and cook rotini until al dente; reserve ½ cup pasta water before draining.
  3. In a skillet, heat oil over medium-high heat, season steak with salt and pepper, then sear for 3–4 minutes until browned; remove from skillet.
  4. In the same skillet, reduce heat, melt butter, then sauté garlic until fragrant. Add tomato paste, smoked paprika, red chili flakes, cream, and reserved pasta water; mix well.
  5. Return rotini and seared steak to the skillet; toss to coat in sauce. Stir in parmesan until melted.
  6. Garnish with parsley and additional red chili flakes before serving.
