  • 2 pounds mixed baby new potatoes or fingerling potatoes
  • 3 cloves garlic
  • 1/2 cup raw cashews (soaked in hot water)
  • 1 tablespoon grainy Dijon mustard
  • 1/3 cup extra virgin olive oil
  • 1 cup fresh basil (chopped)
  • 1/4 cup fresh dill (chopped)
  • 2 chives (chopped)
  • Juice of 1 lemon
  • Kosher salt and black pepper to taste

Instructions

  1. Boil the potatoes: In a large pot, combine potatoes, garlic, and kosher salt with water. Boil until fork-tender (10–15 minutes), then drain and steam in the pot for 20 minutes.
  2. Make the cashew sauce: Blend cooked garlic, soaked cashews, Dijon mustard, and olive oil in a food processor until smooth. Add water if needed for consistency.
  3. Combine: Halve the boiled potatoes and mix with the cashew sauce, fresh herbs, lemon juice, salt, pepper, and crushed red pepper flakes until well coated.
