  • 1 avocado, sliced
  • 1/2 cup carrots, grated
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup peanuts, chopped (for garnish)
  • 1/2 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon maple syrup
  • 1 tablespoon lime juice
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, salt, and pepper on a baking sheet; roast for 25–30 minutes until golden-brown.
  2. In a large mixing bowl, combine broccoli florets, shredded cabbage, grated carrots, and sliced avocado; toss gently.
  3. Whisk together peanut butter, soy sauce, maple syrup, lime juice, sesame oil in a small bowl until smooth; adjust seasoning.
  4. To assemble each bowl: layer mixed vegetables at the bottom, top with roasted sweet potatoes, drizzle with peanut sauce, and garnish with cilantro and peanuts.
