  • 3 ancho peppers
  • 3 pasilla peppers
  • 3 New Mexican dried peppers
  • 2.5 pounds beef chuck (cubed)
  • 1 medium white onion (chopped)
  • 4 cloves garlic (chopped)
  • 2 cups beef stock (or dark beer)
  • 2 tablespoons olive oil
  • Spices: cumin, salt, pepper

Instructions

  1. Toast dried peppers in a dry pan for 1–2 minutes per side until fragrant. Remove stems and seeds.
  2. Soak toasted peppers in hot water for 20 minutes, then blend with water and salt until smooth to make chili paste.
  3. Season cubed beef with cumin, salt, and pepper.
  4. Heat oil in a large pot; sear beef for 6–7 minutes until browned. Remove from pot.
  5. In the same pot, cook chopped onions and jalapenos for about five minutes; add garlic and cook until fragrant.
  6. Return beef to pot; stir in chili paste and cook for an additional 2–3 minutes.
  7. Add broth (or beer), brown sugar, masa harina, and water; bring to a boil.
  8. Reduce heat and simmer covered for about two hours until beef is tender.
