  • 6 oz corn chips
  • 2 lbs lean ground beef
  • 2 large eggs
  • 1 1/2 cups corn and black bean salsa
  • 1 oz taco seasoning
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 2 cups shredded Mexican cheese blend

Instructions

  1. Preheat oven to 350°F.
  2. Crush the corn chips in a Ziploc bag using a rolling pin.
  3. In a mixing bowl, combine ground beef, eggs, crushed chips, salsa (reserve some for topping), taco seasoning, salt, pepper, garlic powder, and mix until just combined.
  4. Transfer mixture to a greased loaf pan and spread reserved salsa on top.
  5. Bake for about 40 minutes; add remaining cheese and bake for additional 10-15 minutes until melted and internal temperature reaches 160°F.
  6. Let rest for 5 minutes before slicing.
