  • 2 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 pound ground beef
  • 2 tablespoons taco seasoning
  • 2 ripe avocados
  • 1 lime, juiced
  • 2 tablespoons chopped fresh cilantro
  • 1 cup diced tomato
  • 1/2 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1/2 cup sour cream

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss cubed sweet potatoes with olive oil, paprika, cumin, salt, and pepper; spread on a baking sheet and roast for 25-30 minutes.
  3. In a skillet over medium heat, brown the ground beef; drain excess fat and stir in taco seasoning with a splash of water.
  4. In a bowl, mash avocados with lime juice, cilantro, and salt for guacamole.
  5. Combine diced tomato, red onion, cilantro in another bowl for pico de gallo.
  6. Assemble bowls by layering roasted sweet potatoes, seasoned beef, guacamole, pico de gallo, and sour cream.
