  • ¼ cup unsweetened almond milk
  • 2 large eggs
  • ½ cup maple syrup
  • ¼ cup melted coconut oil
  • 1 cup oat flour
  • 1 ½ cups almond flour
  • 2 teaspoons cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon sea salt
  • 8 oz full fat cream cheese
  • ½ cup full fat Greek yogurt
  • ¼ cup maple syrup
  • 1 ½ teaspoons vanilla extract

  1. Preheat your oven to 350°F and line a muffin tin with liners.
  2. In one bowl, whisk together the mashed sweet potato, almond milk, eggs, maple syrup, melted coconut oil, and vanilla extract until smooth.
  3. In another bowl, mix oat flour, almond flour, cinnamon, baking powder, baking soda, and sea salt.
