  • 1/2 cup unsalted butter (room temperature)
  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup lemon juice (about 23 lemons)
  • 1 tbsp lemon zest (finely grated)
  • 3 large eggs (room temperature)
  • 1 1/2 cups granulated sugar
  • Powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the butter and powdered sugar until fluffy. Gradually mix in the flour until combined.
  3. Press the mixture into a greased 8” x 8” baking pan and bake for 15 minutes until lightly golden.
  4. In another bowl, whisk together eggs, granulated sugar, lemon juice, lemon zest, and sifted flour until smooth.
  5. Pour the lemon filling over the baked crust and return to the oven for another 30-35 minutes until set.
  6. Allow them to cool completely before cutting into squares and dusting with powdered sugar.
