  • 16 oz short pasta (rigatoni, rotini, bow tie)
  • 3 oz baby spinach
  • 10 oz cherry tomatoes (halved)
  • 8.5 oz jar of sun-dried tomatoes in oil
  • ½ red onion (small diced)
  • ½ cup shredded parmesan cheese
  • 8 oz mozzarella pearls
  • ⅓ cup chopped basil
  • ⅓ cup extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 2 garlic cloves (minced)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and toss with baby spinach until wilted. Let cool for about 15–20 minutes.
  2. In a large bowl, combine cooled pasta and spinach with basil, red onion, sun-dried tomatoes, cherry tomatoes, parmesan cheese, and mozzarella.
  3. In a separate bowl, whisk together olive oil, drained sun-dried tomato oil, balsamic vinegar, garlic, salt, and pepper. Toss three-fourths of the dressing with the salad mixture; reserve one-fourth for later.
  4. Chill the salad in the refrigerator for about 30 minutes before serving. Toss again with remaining dressing just before serving.
