  • 1 lb ground beef or turkey
  • 3 bell peppers (red, yellow, green)
  • 1 cup cooked rice (white or brown)
  • 1 can (14.5 oz) diced tomatoes
  • 1 medium onion
  • 2 cloves garlic
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a large baking dish.
  2. In a skillet over medium heat, brown the ground meat; drain excess fat.
  3. Add chopped onions and minced garlic to the skillet; sauté until softened.
  4. In a bowl, mix together cooked rice, diced tomatoes (with juices), meat mixture, salt, pepper, and half the cheese.
  5. Layer half of this mixture in the baking dish; add sliced bell peppers on top, then add the remaining mixture and sprinkle with extra cheese.
  6. Cover with foil and bake for 25 minutes; remove foil during the last 5 minutes to brown the cheese.
