  • 34 boneless, skinless chicken breasts
  • 2 cups fresh corn kernels (or frozen if necessary)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Dice the onion and mince the garlic. If using fresh corn, cut the kernels off the cobs.
  2. In a large pot over medium heat, add oil and season chicken with salt and pepper. Cook until browned on both sides (about 5 minutes each side). Remove from pot.
  3. In the same pot, sauté onion and garlic until translucent (about 3 minutes).
  4. Return chicken to the pot along with black beans, diced tomatoes (with juice), corn, cumin, chili powder, and about 2 cups of water or broth. Stir well.
  5. Bring to a gentle simmer over medium-low heat for about 20 minutes until flavors meld together.
  6. Shred the chicken using two forks and return it to the chili before serving hot.
