  • 1 cup diced strawberries (about 1 1/4 cups whole)
  • 1/2 cup smashed strawberries (about 1 cup whole)
  • 2 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F and spray an 8 or 9-inch loaf pan with non-stick cooking spray.
  2. In a medium bowl, combine the flour, baking powder, and salt.
  3. In a large bowl, mix together the Greek yogurt, sugar, eggs, almond extract, and vegetable oil until well combined.
  4. Gradually stir in the dry ingredients until just incorporated.
  5. Gently fold in the diced strawberries and pour the batter into the prepared loaf pan.
  6. Bake for about 50 minutes or until a toothpick inserted in the center comes out clean.
  7. Let cool for about 10 minutes before transferring to a cooling rack.
  8. Prepare the glaze by mixing smashed strawberries with powdered sugar and pour over the cooled cake.
