  • 1 tablespoon lemon juice
  • 1 cup water (divided)
  • 3 envelopes unflavored powdered gelatin (about 7 ½ teaspoons)
  • 1 ½ cups granulated sugar
  • 1 cup light corn syrup
  • ¼ teaspoon kosher salt
  • 2 teaspoons vanilla extract

Instructions

  1. Prepare strawberries by mixing diced strawberries with granulated sugar and lemon juice; let sit for 10 minutes.
  2. In a small saucepan, combine half the water with gelatin and let bloom for about 5 minutes.
  3. In another saucepan, mix remaining water, granulated sugar, corn syrup, and salt; heat until it reaches 240°F.
  4. Pour hot syrup into bloomed gelatin while mixing on low speed.
  5. Increase speed to high and whip until fluffy and voluminous (10-15 minutes). Add strawberry mixture and vanilla in the last minute.
  6. Transfer to a greased baking pan lined with parchment paper; smooth the top and let set for at least 4 hours or overnight.
  7. Dust with powdered sugar before cutting into squares.
