  • 3/4 cup sugar
  • 3/4 cup honey
  • 2 tsp vanilla extract
  • 1 tsp bottled lemon juice

  1. Prepare your boiling water canner and heat four half-pint jars in simmering water.
  2. Puree strawberries in a food processor until smooth.
  3. In a deep pot over medium heat, combine strawberry puree, sugar, honey, lemon juice, vanilla extract, and salt. Bring to a boil while stirring frequently.
  4. Lower heat and simmer until thickened (about 60-90 minutes), stirring occasionally.
  5. Fill heated jars, leaving 1/4 inch headspace. Remove air bubbles and seal jars with lids.
  6. Process jars in boiling water for 10 minutes (adjust for altitude).
  7. Remove jars and cool undisturbed for 12-24 hours.
