  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter (melted)
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1/2 cup Greek yogurt
  • 1 1/2 cups diced fresh strawberries
  • 6 oz cream cheese (room temperature)
  • For the streusel: powdered sugar and milk

Instructions

  1. Preheat your oven to 425°F (220°C) and line a cupcake pan with paper liners.
  2. In a medium bowl, prepare the streusel topping by mixing flour, sugar, salt, and melted butter until crumbly. Set aside.
  3. In a large mixing bowl, whisk together the dry ingredients (flour, baking powder, salt).
  4. In another bowl, combine egg and sugars until light; mix in yogurt, oil, and vanilla.
  5. Gently fold wet ingredients into dry ingredients until just combined; add in strawberries.
  6. For the cream cheese filling, blend cream cheese with sugar, cornstarch, and vanilla until smooth.
  7. Fill muffin liners with batter, add cream cheese mixture in the center, then top with more batter.
  8. Sprinkle with streusel and reserved strawberry pieces; bake at 350°F (175°C) for 22–25 minutes.
