  • 1 teaspoon kosher salt
  • ½ cup butter (for caramel sauce)
  • 1 ½ cups brown sugar (for caramel sauce)
  • ½ cup heavy cream (35%) (for caramel sauce)
  • 1 teaspoon kosher salt (for caramel sauce)

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly butter an 11 x 8-inch casserole dish.
  2. Soak chopped dates in a bowl with baking soda. Heat milk until scalding, pour over dates, and let cool for about 15 minutes.
  3. In one bowl, mix flour, baking powder, and kosher salt. In another bowl, beat eggs. Use a food processor to blend eggs, brown sugar, butter, and vanilla until smooth. Gradually add dry ingredients and soaked dates; blend until combined.
  4. Pour batter into the prepared dish and bake for about 30 minutes or until set.
  5. For the sauce: Melt butter in a saucepan, stir in brown sugar and salt until dissolved, then add cream and simmer until thickened.
  6. Once the pudding is baked, poke holes in the surface and drizzle with one-third of the caramel sauce. Allow it to soak for about 15 minutes before serving.
