  • 1 ½ pounds red mini creamer potatoes
  • 4 cups water
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika (smoked or regular)
  • ½ teaspoon black pepper
  • Parsley flakes (fresh or dried)

Instructions

  1. Preheat your oven to 385°F (195°C).
  2. Line a baking sheet with parchment paper.
  3. Wash the mini potatoes under cold water.
  4. Prepare lemon water by mixing 4 cups of cold water with 2 tablespoons of lemon juice.
  5. Carve skull faces into each potato and immediately soak them in lemon water.
  6. In a bowl, mix olive oil, remaining lemon juice, salt, onion powder, garlic powder, paprika, and black pepper until well combined.
  7. Drain the potatoes and coat them in the seasoning mixture.
  8. Arrange on the baking sheet face side up and roast for about 30 minutes or until golden brown.
