- 2 tbsp soy sauce (or tamari)
- 1 tbsp sriracha (to taste)
- 1 cup jasmine rice
- 1 cup coconut milk
- 1/2 cup water
- 1/2 tsp salt
- 1 avocado, sliced
- 1 cup cucumber, sliced
- 1 cup shredded carrots
- 1/4 cup chopped green onions
- Lime wedges, for serving
- Sesame seeds, for garnish
- Fresh cilantro, for garnish
- In a mixing bowl, whisk together soy sauce, sriracha, honey, sesame oil, garlic powder, and black pepper.
- Marinate the salmon in the mixture for about 15 minutes.
- Cook jasmine rice with coconut milk and water according to package instructions.
- Heat a non-stick skillet over medium heat and cook the marinated salmon for 4-5 minutes on each side or until cooked through.
