  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 cup heavy cream (Can substitute half with low-fat milk)
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup crumbled bacon (Optional)
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onion for 5 minutes until softened.
  2. Add minced garlic and diced jalapeños; cook for 2 minutes until fragrant.
  3. Stir in chicken breasts and chicken broth; bring to a boil. Reduce heat and simmer for 15 minutes until chicken is cooked.
  4. Remove chicken, shred it with forks, and return it to the pot.
  5. Mix in heavy cream, cumin, paprika, salt, and pepper.
  6. Stir in cream cheese until melted; then add shredded cheddar cheese until combined.
  7. Optionally mix in crumbled bacon and let simmer for 5 more minutes.
